Simple Silky No-Cook Fudge: The recipe I promised in the story:

Having tried several simple ways to make chocolate that’s easy and relatively healthy, I’ve arrived at a flexible recipe that’s as simple as it gets and turns out both silky smooth and delicious. It’s gluten-free and can be dairy free and sugar-free (Keto) as you wish.

Use a traditional mixer to blend mildly...

1 cup soft coconut oil (do not microwave)*

¼ cup powdered monk fruit sweetener**

Add and blend, again mildly (pausing to spatula the sides down as needed)…

⅓ cup cacao (same as cocoa, but usually more pure)

¼ tsp salt

1 tsp vanilla

Line a ~6x9 dish with waxed paper or parchment. Scoop the fudge in and fridge it for 1 hour. Store in fridge until it all disappears, which won’t be long.

*Can substitute butter if soft but partially solidified (don’t melt it — it’s usually a perfect consistency at room temps), or do ½ and ½. Using liquid butter or oil can cause the sweetener to settle unevenly, but hey, if that’s what you gots, don’t worry.

**Can sub powdered sugar or other powdered sweeteners … don’t use granulated (will be, um, grainy). If you have granulated monk fruit, you can powderize it in a blender.
