Great point, Scott. The packaged, ultra-processed stuff is often ridiculously cheap compared to real food. Lost in the shuffle, perhaps, are raw beans and brown rice, which are relatively inexpensive and, with a little cooking patience and few spices, some fresh lettuce, tomatoes and avocados, go a looooong way (we make big batches, and freeze half the beans in double servings to be thawed on days when we're "out" of food). I've also learned to bake bread, which has become a bit of a hobby, using just 6 ingredients (yeast, whole wheat flour, salt, olive oil, butter, honey) and estimate my cost at about one-third that of store-bought whole wheat bread that typically has 15+ ingredients. I'm making a mean rustic white bread, too—less healthy but scrumptious.
